Kaiserschmarrn - Original recipe
After a long hike through the mountains, you could use some energy. This was true in the past and it is still true today. Fortunately, eating in the mountains provides an extreme amount of energy.
One dish you will encounter in the mountains of Austria and Germany is kaiserschmarrn. Pancakes but with lots of eggs and sultanas, and on top of that it is very powerful. Instead of all thin or small pancakes as we do, Kaiserschmarrn consists of 1 thick one. Once this thick pancake has gained some firmness, it is pulled apart completely with the help of some spatulas so that only small pieces remain. Kaiserschmarrn is eaten with apple compote and powdered sugar.
Kaiserschmarrn recipe
Ingredients
• 3 eggs
• 2 tablespoons butter
• 150 ml milk
• 180 g flour
• Pinch of salt
• 1 tablespoon sultanas
• Powdered sugar
• Extra: apple compote
Preparation
Separate the egg yolks from the whites. Put the yolks and egg whites separately in a bowl. Beat the egg whites with the pinch of salt until stiff.
If you are a sweet tooth, you can add some sugar to the yolks. Add the milk to the egg yolks and add the flour too. Using a mixer or whisk, stir everything well so that there are no more flour lumps. The mixture should now be not very fluid but not very firm either. Now add the egg white and mix well. Melt the butter in a large frying pan. The fat should not get too hot, otherwise the butter will brown too quickly. Pour the Kaiserschmarrn mixture into the pan and sprinkle a few sultanas over the top. Fry the whole at a not too high temperature (a medium temperature) for a few minutes until the bottom has turned golden brown. Turn the pancake. If the pancake cracks, this is no problem as we will pull it apart later anyway. Once the underside is baked golden brown again, you can pull it apart with two spatulas. What I always do is break the pancake in half and then break the next parts in half again until finally small cubes remain. (1.5 / 2 cm by 1.5 / 2 cm). When cooked, sprinkle with icing sugar and your Kaiserschmarrn is ready. The tastiest thing now is to serve apple compote with the Kaiserschmarrn. Guten Appetit!
