Apfelstrudel from Austria

Anyone who has been to Austria cannot avoid it: the apple strudel. The over-familiar pastry with an apple filling that is often served with vanilla sauce. Fancy a bite of Tyrol at home? Then try this apple strudel recipe.

 

Ingredients for authentic apple strudel

Ingredients for the dough:

  • 250 g flour
  • 1 teaspoon sunflower oil
  • 1 teaspoon vinegar
  • 1 egg
  • 1 pinch of salt
  • 125 ml lukewarm water

Ingredients for the filling:

  • 100 grams unsalted butter
  • 80 grams of breadcrumbs or crumbled rusks
  • 50 grams finely chopped walnuts
  • 1.5 kg sour apples
  • 100 grams white granulated sugar
  • 50 grams sultanas
  • 3 tablespoons of cinnamon

Steps

  1. First we make the dough. To do this, sift the flour over a soup plate.
  2. Make a well in the centre of the flour. Put in the oil, vinegar, egg and pinch of salt. Slowly pour in the lukewarm water and stir with a knife until it is a cohesive dough.
  3. Continue kneading the dough by hand or with a food processor until silky smooth.
  4. Lower the dough into a floured board. Cover with a warm damp cloth and leave to rest in a warm place for at least half an hour. Change the cloth 2 or 3 times in that half hour.
  5. Preheat the oven to 180 degrees and meanwhile make the filling: first mix the breadcrumbs with the chopped nuts. Peel the apples, remove the core and cut them into small cubes. Wash the sultanas and melt the butter.
  6. When the dough has rested, place a large, clean tea towel on the table and dust it with a thin layer of flour.
  7. Place the strudel dough in the centre, roll it out a little and gently pull it out lengthwise with your hands until it is a thin and almost transparent dough. Cut off the thick edges.
  8. Place a strip of the breadcrumb mixture in the centre of the strudel dough. This is about two-thirds of the dough, leaving enough dough at the edges to cover the strudel. Lay the apple cubes on top of the mixture. Sprinkle the apple cubes with the sugar, cinnamon and sultanas.
  9. Fold the edges over the filling. Loosely wrap the filling and pinch the ends closed. Place the roll on a greased baking tray and bake for about 30-40 minutes until golden brown.
  10. Serve warm or cold. 

Tip: delicious with warm vanilla sauce or a scoop of vanilla ice cream.
