Quark strudel with apricots

We previously published a recipe for a Topfenstrudel a strudel filled with soft curd cheese. But now we give you the recipe for another variant, the Wachauer Topfenstrudel. A quark strudel, but with apricots. It seems the Germans prefer to use peaches, but whichever you choose, this recipe is well worth trying.

 

Preparation time: 60 minutes. For 10 people.

Ingredients for Wachauer Topfenstrudel

  • 1 packet of puff pastry (officially 2 packets of strudel dough, but you can't find those here)
  • 250 g fresh apricots
  • 500 g soft curd cheese/quark
  • 120 g butter + extra for spreading
  • 80 grams of sugar
  • 1 sachet vanilla sugar
  • 4 eggs
  • 250 ml sour cream
  • The juice of half a lemon
  • Lemon zest
  • Powdered sugar for sprinkling

Steps

  1. Preheat the oven to 170°C and line a baking tray with baking paper.
  2. For the Wachauer Topfenstrudel, we start with the apricots. Wash the apricots, cut them in half and remove the seeds. Then cut them into 8 pieces.
  3. Split the eggs and beat the egg whites until they form nice peaks. Save the yolks.
  4. Put the curd cheese in a mixing bowl and stir well.
  5. Stir the butter with the sugar and vanilla sugar until smooth. Then add the egg yolks, the stirred curd cheese, sour cream, lemon zest and lemon juice to the mixture. Mix well. Finally, spoon in the stiffly beaten egg whites.
  6. Lay a damp tea towel on the countertop and a dry tea towel on top. Now lay the sheets of puff pastry from a packet on top of this tea towel (3x3). Stick them together with some water and press the edges. Next, spread the sheets with liquid butter. Then spread the curd cheese mixture finger-thickly on top.
  7. Sprinkle the apricot pieces on top. Take one side of the tea towels and roll up the strudel from the long side. Press the sides closed and place the strudel in the baking tin. Coat the strudel with liquid butter and then bake for 50 minutes until golden brown in a preheated oven. When still warm, sprinkle the strudel with icing sugar.
  8. Serve warm or cold. Enjoy!
